Lesson to be learned is that a baker must have forward thinking!
A baker must prepare for the next day the night before, days before, weeks before and even months before. Some of the products are seasonal, and must be ordered in advance, some of the product is frozen and may need time to thaw out. Some ingredients require room temperature and some of the product will need time to rise. The baker normally starts when your day is coming to a close and their day ends when you are rising for the day.
